Eggplant With Yogurt Sauce

Eggplant:
1 tablespoon lemon juice
1 tablespoon oil
1 1/2-pound eggplant, cut into 3/4-inch slices

Sauce:
3/4 cup plain yogurt
1/3 cup Feta cheese
1/4 cup chopped onion
3 tablespoons fresh mint leaves (optional)
1 tablespoon lemon juice
1 tsp. finely chopped fresh garlic
1/8 tsp. ground red pepper

Heat broiler or grill. Stir together lemon juice and oil. Brush on both sides of eggplant. Broil 6-8 inches away from heat, or grill, turning once, until tender and lightly browned. (6-8 minutes) Meanwhile, combine all sauce ingredients; mix well. Serve over warm eggplant slices.

Makes 5 Servings.

Note: You can also slice the eggplant in half and serve inside a pita with sauce.
