2 pounds new potatoes, peeled and diced 2 leeks, washed, trimmed (white part only), cut into bite-sized pieces 2 sweet onions, chopped 1 stalk celery, sliced (optional) 1 tbsp. fresh minced parsley 1 quart chicken broth 1 tsp. salt 1/8 tsp. pepper 2 cups scaled half-and-half 2 tbsp. butter 1/4 cup chives 1/2 pound bacon, crisp and broken in pieces.
| | | Combine all ingredients except cream, butter, chives and bacon in a large slow-cooker. Cook on low 10 hours. During the last hour of cooking,add the cream and butter. Serve in preheated bowls. Garnish with chives and bacon.
