Crock Pot Roast Beef

5 lb Chuck roast
4 medium potatoes
1 pound package Baby Carrots
1 cup water
2 beef bouillon cubes
1 small onion, sliced thin
In a large skillet cook onion until soft and lightly browned. Remove and add to crockpot. In the same skillet add a little more oil and brown roast on all sides, seasoning with salt and pepper as you do so. Dissolve bouillon cubes in the 1 cup of water. Place onions and vegetables in the bottom of the crock pot, add bouillon mixture and spices. Stir to mix vegetables and liquid. Place roast on top of vegetables. Cook for 6-8 hours on high until roast in tender. Yield: 6 servings
