Click here for a printable version of this recipe

Serves 4

1 acorn squash (about 1 lb.)
1 golden delicious apple, peeled, cored, and sliced
2 tsp. butter or margarine, melted
2 tsp. brown sugar
1/8 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Dash of ground cloves

Pre-heat oven to 350º F degrees and lightly grease a 1-quart baking dish.

Halve squash, remove seeds, and cut into quarters. Place quarters skin-side up in dish and bake, covered, for 30 minutes.

Meanwhile, in a medium bowl, combine apple, butter, brown sugar, cinnamon, nutmeg, and cloves.

Turn the squash's cut sides up and stuff them with the apple mixture. Cover and bake for 30 minutes longer, or until apples are tender. Serve warm.
