1 c. sour cream 3/4 c. cooked pinto beans, mashed 3 eggs, beaten 1 c. sugar 1/4 c. nuts, chopped 1 tsp. cinnamon Whipping cream or ice cream 1/4 tsp. salt
| | | Combine sour cream, eggs, and seasonings, mix well. Add beans and nuts. Pour into unbaked pie shell. Bake in hot oven at 425 degrees for 10 minutes. Reduce heat to 350' and bake 35 to 40 minutes. Cool, spread with whipped cream (fresh is better) or vanilla ice cream.
