1 cup butter at room temperature
1 cup brown sugar
2 eggs, separated
2 cups sifted flour
Finely chopped pecans
raspberry preserves with seeds
Cream butter until soft; add brown sugar. Add egg yolks and beat until light. Blend in the sifted flour. Form 1-inch balls. Roll balls into egg whites, then into chopped pecans. Put on a greased cookie sheet and make a thumbprint in the middle of the cookie. Bake at 300 degrees for 5 minutes. Remove from oven and make the thumbprint impression again. Bake for an additional 15 minutes. Cool cookies completely on cookie sheet. Add preserves into the thumbprint.

Note: These cookies tend to spread ... Make sure you use a cool cookie sheet.
