1 c. sifted flour 1 tsp. vanilla 1 tsp. baking powder 1/4 c. hot water 1/4 tsp. salt Jam or jelly 4 eggs, separated Powdered sugar 1 c. sugar
| | | Sift together flour, baking powder and salt. Beat egg yolks until thick and lemon-colored. Gradually add sugar, beating until light and fluffy. Stir in vanilla. Fold egg whites beaten stiff but not dry. Gently fold in flour mixture. Add hot water and quickly stir to smooth batter. Pour into 10 x 15 inch cookie sheet that has been covered with aluminum foil and greased. Spread batter evenly into pan; batter will be thin. Bake in a moderate oven (350 degrees) 12 to 15 minutes. Top should be softly browned. Invert over a clean tea towel dusted with powdered sugar. Carefully remove the foil and trim edges if they are too brown. Roll cake lengthwise together with towel; cool for 20 minutes. During that time, whip the ham or jelly in a bowl, using electric beaters. Unroll the cake and spread the jelly. Reroll and sift powdered sugar over it. You may use toothpicks to hold the cake together along 1~ seam until you serve it.
