Fresh Apple Cake with Cream Cheese Frosting

Very moist and excellent flavor and texture -- without being too sweet

1-1/3 cups granulated sugar
1 cup (2 sticks) butter or margarine
2 eggs
1/2 cup cold coffee
1 teaspoon baking soda
1 teaspoon nutmeg
2 cups grated raw apple
1 cup chopped pecans or walnuts or almonds
2 teaspoons vanilla
2-3/4 cups all purpose flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup raisins

Frosting:

3 oz cream cheese softened
3 cups powdered sugar
1/4 cup butter or margarine
1 teaspoon vanilla

Preheat oven to 375 degrees combine sugar, butter, eggs and vanilla in bowl beat until smooth and well blended add coffee alternately with dry ingredients. stir in apple, raisins and nuts spread batter in a greased and flowered 9" x 13" pan. Bake until a pick inserted in center comes out clean: about 30-35 minutes

Frosting:

Beat cream cheese & butter together. Add powdered sugar and vanilla, beating until smooth and creamy (if necessary, add a few drops of milk or cream for proper spreading consistency) Enjoy!

Frosting - Serves 12

Note: Cool completely before garnishing with Cream Cheese
