| Cake mixture 2 cups all purpose flour 1 stick butter, softened 1 tsp. vanilla 1/2 cup sugar 2 eggs 1 tsp. baking powder 1/2 tsp. salt 1/2 cup applesauce Crumb mixture: 1 1/2 cups brown sugar 3 Tbsp. flour 2 tsp. cinnamon 1/4 cup butter, melted 1 1/2 cups Granny Smith Apples, pared and chopped with the skins left on. Icing: 1 cup powdered sugar 1/2 tsp. vanilla 1 Tbsp. water

| To make cake batter, cream together butter and sugar, add flour, baking powder and salt followed by eggs, vanilla and applesauce and mix well To make crumb mixture, combine brown sugar, apples, flour, cinnamon and butter and mix well. Grease and lightly flour a tube pan, spoon 1/2 cake batter in the pan followed by 1/2 the crumb mixture. Then add the remainder of the cake batter followed by the remainder of the crumb mixture into the pan. Bake at 350 degrees for 40-45 minutes. Allow to cool. Remove cake from the pan and place on a plate, mix icing ingredients together and drizzle over cake. You may serve this cake with vanilla ice-cream if desired. Submitted by Pat Sinclair |
