2 c. sugar 1 tsp. vanilla 1/2 c. light corn syrup 3/4 c. nuts, chopped 1/2 c. water 3/4 c. maraschino cherries Dash of salt 2 egg whites, beaten stiff | | | Combine sugar, syrup and water in a medium saucepan. Stir over low heat until sugar dissolves. Cook over medium without stirring until syrup reaches soft-ball stage (270 degrees). Pour syrup slowly over the egg whites. Beat constantly until mixture holds its shape. Add nuts and vanilla and cherries. Drop from spoon onto buttered sheet. Garnish tops with cherry halves. This may also be made without the cherries for regular divinity. Makes about 40 pieces. May also be put in buttered pan and cut when stiff enough. |
