Homemade fortune cookies are a fun way to finish an Oriental meal. Here is an easy recipe for this tasty treat: 3 Tablespoons butter or margarine (softened) 3 Tablesoopns sugar 1 egg white 1/2 teaspoon vanilla or almond extract 1/3 cup flour 2 teaspoons orange rind (optional) Write fortunes with predictions of happiness, good health and prsperity on small strips of paper. In small bowl beat together first four ingredients. Stir in flour. Drop rounded teaspoon of batter on cookie sheet; spread to 31/2" circle. Bake 4-5 minutes at 400 degrees or until lightly browned. Quickly loosen cookies with wide spatula and flip over. Put fortune in center; fold cookie in half and then fold again over edge of bowl. Makes 20 cookies.
