WHOLE WHEAT BANANA BREAD

1/2 cup extra-virgin olive oil
1 cup honey
2 eggs
1 cup mashed bananas (about 3 bananas)
2 cups whole-wheat flour
˝ teaspoon salt
1 teaspoon baking soda
2 tablespoons hot water
1/2 cup chopped pecans
1/4 cup dried cranberries

Blend together olive oil, honey, eggs, and banana.

Sift together flour, salt, and soda. Stir flour mixture and water into the oil mixture.

Add nuts and cranberries.

Bake in 9x5 inch loaf pan at 325 degrees for 1 hour 10 minutes, or in a 9x9 square pan for 1 hour. Remove when a knife in the center comes out clean.

This recipe can be doubled or tripled—the loaves freeze well.
