Gianna's Seasoned Chicken and Rice1 lb of boneless, skinless chicken breasts
1 tbsp of Worcestershire sauce
Marinate for about an hour (or overnight in fridge) and grill until no longer pink, cut into cubes. Set aside.
1 tbsp of corn oil
˝ a medium onion, diced
1 garlic clove, diced
8 oz of red beans, cooked
˝ lb of polish sausage, cubed
4 oz of ham, cubed
16 oz can of diced tomatoes
1 tbsp of Worcestershire sauce
salt and pepper to taste
dash of Tabasco sauce (optional)
dash of chili powder
4 cups of hot, cooked rice.
In a large saucepan sauté onion and garlic in corn oil. Add polish sausage, ham, chicken, beans and sauté for about 2 minutes. Add diced tomatoes, Worcestershire sauce, salt, pepper, Tabasco sauce and chili powder. Cook for about 5 minutes, stirring. Add 4 cups of cooked rice and stir until well blended. Cook covered for about 10 minutes, stirring every 2 minutes to keep rice from sticking. Take off heat and cover for another 10 minutes. Stir rice before serving. Can be a main dish, or side dish. Very delicious and filling!
