seasoning salt garlic powder pepper 1 large onion - halved and then sliced 1 tbsp butter or margarine 1 to 2 tbsp olive oil salsa monterey jack or mozzerella cheese Put in large skillet margarine and l tbsp olive oil. Add onions and saute at medium heat until they become translucent and slightly browned. Move to side of pan add remainder of olive oil. Sprinkle spices on chicken and cook in skillet with onions. When chicken is cooked through spoon onions on top of chicken breasts, top with salsa (mild or spicy to your taste)then place slices of cheese on top. Turn heat off under pan, cover with lid and leave until cheese melts - approx 3 to 5 minutes. Serve with your favorite mexican side dishes such as refried beans and rice. |
