Lemon Chive Butter

1 cup butter
1/2 cup chopped chives
2 T. grated lemon zest, no white
Mix all together and keep refrigerated in a
covered container. Also, you can freeze
half of it or more in a freezer container for
2-3 months. Use on broiled or baked fish,
grilled shrimp or other seafood, or
as a spread for tea sandwiches
