1/2 cup sugar 1 pkg. unflavored gelatin 12-15 maraschino cherries, diced 2 pkg. cream cheese 1 tub of Cool Whip Whipped topping 1 1/2 tablespoon lemon juice 1 1/2 tablespoon maraschino cherry juice Set aside sugar and diced maraschino cherries until needed. Put the pineapple and sugar on the stove on medium heat until it gets to a boil. After a couple of minutes, add the sugar into the mixture. Stir until well mixed. Wait until it gets to a boil. Meanwhile, mash in the diced maraschino cherries into the cream cheese into a bowl. When pineapple reaches a boil, slowly put the mixture with the unflavored gelatin, lemon juice and cherry juice. Slowly pour the pineapple into the cream cheese mixture, stirring constantly. Refrigerate 2 hrs. and mix Cool Whip Whipped topping after two hours is complete. Refrigerate for another two hours or until set. Serve and enjoy this family favorite! |
