1 cup old-fashioned oatmeal, uncooked 1 cup-all purpose flour 1 tsp baking powder 1/2 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1 15oz can sweet potatoes,drained and mashed, or 1 cup fresh sweet potatoes, cooked and mashed 3/4 cup light brown sugar 1/3 cup canola oil 1/4 cup skim milk 1 egg 1 tsp vanilla extract Crumble topping (see below) Heat oven to 400 . In large bowl, combine oatmeal, flour, baking powder, baking soda, cinnamon and nutmeg Stir in sweet potatoes, brown sugar, oil, milk, egg and vanilla, just until moistned well and taking care not to overmix. Fill paper-lined muffin tins 3/4 full: sprinkle with crumble topping. Bake in preheated oven 15-20 minutes. Makes 18 muffins CRUMBLE TOPPING 1/4 cup old fashioned oatmeal 1/4 cup all purpose flour 1/4 cup light brown sugar 1TBLS butter or margarine, melted 1tsp vanilla extract In bowl, mix oatmeal, flour and sugar. With fork, mix in butter and vanilla until crumbly. |
