Carrot Cake

2 eggs
1/2 C. plus 2 T. sugar
1/2 C Cannola oil
1/4 C. Butter
1/4 C. Buttermilk
1 1/2 C. grated Carrots
1/2 C. chopped Walnuts
1 1/4 C. Flour
1 t. Baking Soda
1 T. Cinnamon
Preheat oven to 300 degrees.Butter an 8 inch square baking dish(I use glass).In a large mixing bowl beat the eggs well,add next 4 ingredients,beat until well blended.Stir in carrots and nuts.In a seperate bowl sift together the remaining ingredients.Fold into carrot mixture and blend well-do not beat.Pour into prepared pan and bake one hour.
Cool and frost with Cream Gheese frosting if desired.
