1 onion peeled and chunked 1clove of garlic 1 box of elbow macaroni or spiral 1 8oz pkg any cheese blend you like salt and pepper to taste Cook noodles to pkg instructions and set aside. In a pot boil squash, onion and garlic with water covering. When tender drain all water except for about 1/2 cup of liquid. In a blender puree veggies and liquid. Then add to noodles and mix in cheese. Note: you may have too much sauce depending on the size of your squash. |
