Preheat oven to 350 F (180 C)1 1/4 cups (300 ml) butter or margarine
1 cup (250 ml) white sugar
1 cup (250 ml) golden brown sugar
2 whole eggs
1 tsp. (5 ml) vanilla extract
2 cups (500 ml) all purpose flour
2 tsp. (10 ml) baking powder
3/4 tsp. (4 ml) ground cinnamon
1/2 tsp. (3 ml) salt
2 cups (500 ml) oatmeal
Preparation:
1. Cream butter ans sugars until light and fluffy, mix in eggs and vanilla.
2. Sift together flour, baking powder, cinnamon and salt. Add to creamed mixture. Blend thoroughly.
3. Stir in oats. blend thoroughly.
4. Pu on a cookies sheet; 1 tbsp. (15 ml) size. about 2 inches (5 cm) apart.
5. Bake 11 to 13 minutes. Cool for a minimum 5 minutes BEFORE removing from the cookes sheet.
Varieties: Stir in 1 cup (250 ml) raisins, and/or 1 cup (250 ml) coconut or 1 cup (250 ml) chopped nuts, or 1 cup (250 ml) chocolate chips.
Makes about 6 1/2 dozen cookies
