1 tbsp Dried Thyme 1 1/2 tsp Cayenne pepper 1 1/2 tsp Black pepper 1 1/2 tsp Ground sage 3/4 tsp Grated nutmeg 3/4 tsp Cinnamon 2 tbsp Salt 2 tbsp Garlic powder 1 tbsp Sugar 1/4 c Soy sauce 3/4 c Vinegar 1/2 c Orange juice 1/4 c Olive oil 1 c Minced onion 3 ea Chopped Green onions 4 to 6 Chicken breasts, halves In a large bowl combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. Slowly mix in the soy sauce, vinegar, and orange juice. In slow stream add the olive oil. Add onion and green onion. Combine well. Add the chicken and allow to marinate at least 1 hour at room temperature or over night, covered in refrigerator. Grill chicken 6 min. each side. Chicken may also be broiled indoors 5-6 min. each side. For hotter flavor, double amounts of first 7 ingredients. Serves 4 to 6 depending on how many chicken breasts you made and didn't drop on the ground for the dog to run off with. I usually serve this with fruit salad, potato chips (my sister's got to eat something) and a burn kit if Dad's been doing any of the cooking. |
