| Tear bread in pieces. Soak in milk briefly, and then squeeze out the excess. Place in bowl. Heat 1 Tablespoon oil over medium heat. Add chopped onion cook 3 minutes or so, then add garlic. Cook until soft, about 1 minute. Scrape the garlic and onion into the bowl with the bread, add 1 tsp. salt, 1/4 tsp. pepper, the cheese, thyme, and ground meat. Mix with hands, then form into 2 inch balls. Cook in large skillet, the one that you cooked garlic in, or add some oil to a new one. Cook until done, about 15 minutes, turning meatballs and watching carefully. Add to sauce, heat through. I often add a tsp. or so of dried oregano and basil to the storemade sauce while it's heating.
