3 eggs 1 tsp. cinnamon 1 c. oil 1 tsp. salt 2 1/4 c. sugar 1 tsp. baking soda 2 c. zucchini, grated. If small, do not peel 1 1/4 tsp. baking powder 1 c. nuts, finely chopped 1 tbsp. vanilla 3 c. flour 1 c. raisins | | | Beat eggs, adding oil, sugar, flavoring and add zucchini, mix well. Add dry ingredients together. Fold in nuts and raisins. Spoon into 3 greased and floured pans or 1 large 13 x 9 x 2 inch pan. Bake about one hour at 325'. Test the bread using a toothpick, if not done can be baked longer. ~ Margaret |
