Maple Pecan Bread

3/4 cup dark brown sugar, packed
1 (4 ounce) stick unsalted butter, cut up
3 extra large eggs
3/4 cup pure maple syrup
1/2 tsp. baking soda
1/2 tsp. baking powder
1/3 cup bourbon
2 1/4 cups cake flour
3/4 to 1 cup pecan pieces, toasted

Preheat oven to 350 degrees and oil a loaf pan. Combine the brown sugar with the butter with a food processor or hand mixer. Add the next five ingredients. Add the flour and process until just combined. Add the pecans and by hand incorporate them into batter. Transfer batter to prepared loaf pan and bake for 1 hour and 15 minutes until toothpick comes out clean.
