| Have all ingredients a room temperature and program your machine for the dough cycle. Place the eggs; egg yolks, sugar and almond extract in the machine and press start. Mix for 3 minutes, not counting the pre-knead cycle. In small bowl, mix together the flour, salt, and baking powder. With the machine still running, add the dry ingredients and mix until a ball forms. Add the almonds and knead in the machine for 1 to 2 minutes, just until the almonds are incorporated. It is better to too little kneading and finish by hand completing the biscotti: 1 large tbsp. coarse sugar Preheat the oven to 350 degrees with the rack in center of oven. Line a heavy-duty baking sheet with foil; oil the foil or spray with nonstick spray. Remove the dough to a lightly floured work surface. Dust your hands with flour and form the dough into a thick log. Cut the log into 3 equal parts and roll Each into an 11 x 1 3/ inch log. Flatten the tops slightly with fingers. Place the logs at least 2 unches apart on the prepared baking sheet. Mix the egg and water together, brush the logs with this mixture, then sprinkle generously with the sugar. Bake 30 minutes Remove baking sheet from oven and lower temp to 325 degrees. Using a serrated knife, slice each log diagonally into 1/2 to 3/4-inch pieces. Lay on sides on the same baking sheets and return to oven and bake for 10 minutes. Remove from oven and let cool completely on rack. Store in airtight bin.
