| The night before, mix the 1 cup water with the yeast and 2 cups flour. Allow to stand overnight. The next day, to the sponge, add 1 1/2 cups tepid water, salt and with mixer begin to add flour to make a dough. Turn dough out onto work surfacewhen it becomes too difficult to incorporate flour with machine and knead remaining flour in by hand. Place in an oiled bowl and allow to rise until doubled, about 1 1/2 hours. Punch down dough and form into two regular or three small loaves. Allow the loaves to rise for about 45 minutes to 1 hour. Bake in a preheated 450 degree oven for about 25 minutes or until well browned and when you tap them they sound hollow.
