Sour Cream Chicken Enchiladas

Click here for a printable version of this recipe

2 small or 1 large can Cream of Chicken Soup (I have also used cream of mushroom and cream of celery)
1 dozen corn tortillas
2 cups Monterey Jack Cheese or Cheddar Cheese
1 small can green chilies (these are not hot)
1 chicken boiled and boned and cut into chunks (I have also used left over turkey)
2 cups broth from chicken
1 cup sour cream

Mix soup, chilies, and sour cream, and broth together. Put small amount of mixture on bottom of casserole dish so tortillas will not stick. Then lay out tortillas to cover bottom of dish (9 x 12) or use a spray such as Pam. Cover tortillas with the soup mixture and then sprinkle chicken on and then cheese. You then place another layer of tortillas, soup, meat, cheese until you have used all the tortillas. When you have finished layering these you put them into a oven at 350 degrees for about 30 minutes (just until hot).

Note: I usual soft my tortillas in oil and then pat dry with paper towel. Makes for a better casserole.
