Chile Egg Puff

Ingredients:

12 eggs
1/2 cup flour
1 tsp. baking powder
1/2 tsp. salt
2 cup small curd cottage cheese
2 cup shredded cheddar or jack cheese
1/2 cup melted butter or margarine
2 4-oz cans diced green chiles

Beat eggs until light and fluffy. In seperate bowl, combine all dry ingredients then stir into eggs. Add the cottage cheese, shredded cheese and butter and stir into the egg mixture until smooth. stir in chiles.

Pour into a buttered 9 x 13" baking dish. Bake at 350 degrees for 35 minutes or until firm. Serve plain or with mild salsa and sour cream.
