MaMa Chetta's Pumpkin Bread

Ingredients:
3 cups sugar (1/2 white & 1/2 brown)
1 cup vegetable oil
4 eggs, lightly beaten
16 ounces canned pumpkin
3-1/2 cups flour
2 tsp. salt
2 tsp. baking soda
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
2/3 cup water

Directions:
Preheat oven to 350 degrees. Butter and flour two (2) 9x5 loaf pans. Stir together sugar and oil. Stir in eggs and pumpkin. Combine dry ingredients in separate bowl. Blend dry ingredients and water into wet mixture, alternating. Divide batter between the two loaf pans. Bake for 30 – 40 minutes or until cake tester comes out clean.

For a tasty treat, lightly toast with and spread pumpkin butter on top!
