4-5 very ripe tomatoes, blanched, peeled and chopped 1 large onion, peeled and finely chopped 2 cups stock 1 tsp dried mixed herbs Seasoning to taste In a little oil, saute onion for 2 minutes. Add remaining ingredients and bring to the boil. Leave to simmer for 30-40 minutes, until pumpkin is tender. Remove from heat, leave to cool slightly, then mash or blend. Serve hot with bread or rolls. Freezes well. |
