Supreme Vegan Pizza

Ingredients:

Boboli pizza crust (2)
2 jars pizza sauce (you’ll have ½ a jar left over)
oregano
crushed garlic
basil
3 large whole tomatoes
1 med. Sweet onion
1 green pepper
1 red pepper
1 yellow pepper
1 orange pepper
1 jar hot banana peppers
1 lg. Can black olives
mushrooms (regular)
portabella mushrooms
2 packs soy-pepperoni
2 bags soy-cheese (mozz)
1 bag soy-cheese (parm blend)
crushed red pepper
salt
black pepper


Directions:
Pre-heat over to 375 degrees

Prepare vegetables:
Halve and core/clean all peppers
Slice peppers into ¼” slivers (top-bottom slices)
Cut end of onion off and slice into ¼” sections to get ‘onion rings’
Cut end of tomatoes off and slice into ¼” sections (tomato slices)
Clean mushrooms/portabella
Slice mushrooms/portabella into ¼” slices

Hard vegetables take longer to cook. On a plate, separate your onion rings and microwave for 90 seconds. Place in a bowl. Repeat the with the peppers.

Place pizza crusts on 2 separate pizza tins/cookie trays

Cover both pizza’s with liberal coating of sauce (1 jar for both pizzas).
Lightly sprinkle crushed red pepper over sauce.
Season sauce lightly with oregano and basil.
Cover majority of the surface of each pizza with tomato slices.
Sprinkle light coating of crushed garlic over tomato’s
Place onion rings over the tomato’s
Place roughly a equal part of each type of pepper over each pizza. Random placement is fine, try to cover a majority of the pizza with a little of something.
Place mushrooms on both pizzas like you did with the peppers.
Take banana peppers and place them over each pizza (fill in the blanks.. use the entire jar)
Using a spoon, apply a light coating of pizza sauce over each pizza (about ¼ jar of pizza sauce)
Lightly salt and pepper both pizzas
Use one bag of mozz cheese on each pizza, spread evenly and break up cheese to ensure proper melting.
Use one package of pepperoni on each pizza, spread evenly.
Sprinkle a light coating of crushed red pepper over pepperoni
Split the can of black olives between both pizzas, spreading a light topping of olives over both
Split the bag of parm cheese and cover each of the pizzas with ½.

Cook each pizza separately for 20 minutes @ 375 degrees. Pull from oven, cut, and microwave for additional 60 seconds to melt remaining cheese. Serve
