Split Eggplant lengthwise
Score the inside and cut out in cubes.Preheat oven at 350 degrees.
Spray inside of shells with olive oil and a little salt.
Place empty shells in shallow covered baking dish and pre bake for about 10 minutes in Microwave.
Filling: Combine the cubes in a fry pan with 2 TBS olive oil and approx. l/4 C onions chopped, l/4C green,red and/or yellow peppers, 1 small yellow zucchini chopped
and approx. l/4 cup of bread cubes. Saute all for about 10 minutes with the following seasonings: lemon pepper, garlic powder or minced fresh, 1 tsp salt and about l/2 tsp paprika. Add 1 large tomato chopped and mix thoroughly, cooking for another 2 minutes.
Fill the pre cooked shells with saute mixture. Bake covered in preheated oven for 30 minutes. Sprinkle choice of cheese over top, return to oven til melted.
