red tomatoes yellow peppers 2 T. olive oil 1 T. white wine vinegar 1 T. cut chives or green onion 2 t. cut fresh basil Dijon mustard to taste blue cheese or Feta cheese Mix olive oil, white wine vinegar, mustard and snipped chives or green onions in a jar. Slice tomatoes and yellow peppers, and line up on baby spinach leaves. Pour dressing over and sprinkle with cheese and fresh basil. (This makes a beautiful presentation on a large platter or serving plate.) |
