2 cups packed brown sugar, 1 cup butter or margarine--softened, 1 teaspoon vanilla, 2 eggs, 2 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 3 cups quick-cooking or regular oats, 2 tablespoons margarine or butter, 1 can (14 ounces) sweetened condensed milk, 1 package (12 ounces) semisweet chocolate chips, 1 cup chopped nuts, 1 teaspoon vanilla, 1/2 teaspoon salt | | | Heat oven to 350 degrees. Mix brown sugar, 1 cup margarine, 1 teaspoon vanilla and the eggs. Stir in flour, baking soda and 1/2 teaspoon salt; stir in oats. Reserve 1/3 of the oat mixture. Press remaining oat mixture into greased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Heat 2 tablespoons margarine, the milk and chocolate chips over low heat, stirring constantly, until chocolate is melted; remove from heat. Stir in nuts, 1 teaspoon vanilla and 1/2 teaspoon salt. Spread over oat mixture in pan. Drop reserved oat mixture by rounded teaspoonfuls onto chocolate mixture. Bake until golden brownm, 25 to 30 minutes. Cut in 2 x 1 inch bars while warm. Makes 70 bars. |
