1/2 cup granulated sugar, 1/2 cup packed brown sugar, 1/4 cup butter or margarine--softened, 1/4 cup shortening, 1/2 teaspoon baking soda, 1/2 teaspoon ground cinnamon, 1/2 teaspoon vanilla, 1/4 teaspoon baking powder. 1/4 teaspoon salt, 1 egg, 1 1/2 cups quick-cooking oats, 1 cup flour, 1 cup raisins or chopped nuts (or 1/2 cup of each)
| | Heat oven to 375 degrees. Mix all ingredients except oats, flour and nuts/raisins. Stir in oats, flour and, if desired, nuts/raisins. Drop dough by rounded teaspoonsfuls about 2 inches apart onto greased cookie sheet. Bake until light brown, about 10 minutes. Remove from cookie sheet immediately. Makes about 2 dozen cookies. |
