1 cup sugar, 1/3 cup vegetable oil, 3 eggs, grated peel and juice from 1 orange, 3 1/4 cups flour, 2 teaspoons baking powder, 1/2 teaspoon salt, Filling: Mix together 1 pound cut-up cooked prunes with 1 cup chopped nuts and 1 tablespoon each sugar and lemon juice. | | Beat sugar, oil and eggs until blended. Stir in orange peel and juice. Mix in flour, baking powder and salt. Cover and refrigerate at least 2 hours. Heat oven to 375 degrees. Divide dough into halves. Roll each half 1/8 inch thick on lightly floured, cloth-covered board. Cut into 3-inch rounds. Spoon 1 teaspoon filling onto each round. Fold each round to form triangle. Pinch edges together to form slight ridge. Place on lightly greased cookie sheet. Bake until golden brown, 12 to 15 minutes.Makes about 4 1/2 dozen cookies. |
