2/3 c. green onions, chopped 1 bay leaf 1 tsp. coriander 3 tbsp. fresh thyme or 1 tbsp. dried 1 tsp. black pepper 1/3 tsp. nutmeg 3 tbsp. peanut oil 1/2 tsp. allspice 3 tbsp. soy sauce 4 lg. boneless, skinless chicken breast halves 2 tbsp. fresh ginger, minced 1 tbsp. garlic, minced 1 habanero chili, seeded, minced or tbsp. serrano chili, minced
| | Combine all ingredients except chicken in large Ziploc bag or covered container, mixing to blend well. Add chicken and marinate in refrigerator several hours or overnight. Grill chicken on covered grill over medium coals, 4 to 6 minutes on each side until just cooked through, but still tender and moist.
