1 cup packed brown sugar, 1 cup margarine or butter--softened, 1 egg--separated, 1 teaspoon vanilla, 2 cups flour, 1/4 teasppon salt, 1 teaspoon ground ginger, 1/4 cup chopped salted macadamia nuts, 1/4 cup flaked coconut | | | Heat oven to 275 degrees. Mix brown sugar, margarine, egg yolk and vanilla. Stir in flour, salt and ginger. Spread in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Brush with unbeaten egg white. Sprinkle with macadamia nuts and coconut; press lightly. Bake 1 hour. While warm, cut into 2 1/2 inch squares. then cut each square diagonally into halves. Cool. |
