1 lb Ziti (Penne Pasta) 1 Jar favorite Pasta Sauce or your own homemade sauce l lb ground beef, pork, and veal Mix the ground meat with egg, garlic or garlic powder, bread crumbs or whatever you choose to make your meatballs. You may choose to just crumble the meat and mix it into the sauce. I mix some with my homemade sauce and also make meat balls. Peel and slice eggplant. You may slice on the round or in strips about 1/2 inch wide. Let drain for about 1/2 hour in colander. Cook pasta according to directions being careful to not over cook because this dish will be going into the oven to cook further. Drain pasta, layer of pasta, layer of eggplant,ladle on the sauce with meat (if using meatballs slice a few meat balls and layer on top of egg-plant, shredded mozzarella cheese, sauce. Repeat layers until everything is used. Last layer should be sauce and cheese. Bake in 375 degree oven for about 30 to 40 minutes. Best in Pyrex baking dish. When finished let stand for a few minutes, serve and enjoy. |
