4 egg whites, 2 cups powdered sugar, 2 cups finely crushed vanilla wafer crumbs(about 60), 2 tablespoons unsweetened cocoa powder, 1/2 teaspoon cinnamon, 1/2 cup flaked coconut | | | Grease cookie sheets; set aside. Preheat oven to 325 degrees. In a large bowl, beat egg whites until soft peaks form. Gradually add powdered sugar, beating until soft peaks form. Combine wafer crumbs, cocoa and cinnamon. Fold into egg white mixture. Fold in coconut. Drop from a teaspoon onto prepared cookie sheets 2 inches apart. Bake 20 minutes. Cool on wire racks. Makes 45 to 50 cookies. |
