1 stick butter, 1 medium to large onion, flour, 2 to 3 cans chick broth, 1/2 teaspoon parsley, 1 large head broccoli, 2 to 3 cups milk or cream, 1 teaspoon salt, dash of pepper | | | In large pan melt butter and saute onion. Add flour just to thicken until mixture is paste like. Add 2 to 3 cans chicken broth and simmer until thickened. Meanwhile, cook broccoli. Save 1 cup of liquid that broccoli was cooked in to add to chicken broth mixture. When mix is thick, add broccoli and simmer. Add milk or cream, season, and simmer for about 5 to 10 minutes. |
