8 slices of day-old bread 6 slices of American cheese or cheese of choice 2 tablespoons Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon pepper 3 eggs 1 cup milk 1/2 cup cream of mushroom soup 1/4 cup canned mushrooms butter | | | Remove the crust from the bread and butter one side of each slice. Place 4 of these slices butter side down in a 9x9" pan. Cover evenly with American cheese and then sprinkle with Parmesan cheese, salt and pepper. Place the reamining slices of bread on top, butter side up. Beat the eggs and milk together and pour mixture over bread. Refrigerate for several hours or overnight. When ready to bake, set the pan into a larger baking dish which is filled with water to 1/2". Bake at 324* for 45 minutes. While baking, combine the mushroom soup and mushrooms (using only the mushroom liquid to dilute the soup). Heat mushroom mixture and serve over the strata. |
