Apricot Nut Bread

3/4 cup water
3/4 cup chopped dried apricots
1/3 cup raisins
3/4 cup brown sugar
3 tablespoons cooking oil
1 egg, slightly beaten
1/2 cup chopped nuts
1 1/2 cup unsifted flour
1 teaspoon soda
1 teaspoon salt
Combine water, apricots and raisins in 2 cup
glass measure. Microwave for about 2 minutes
on High or until boiling. Combine brown sugar,
oil and egg; mix well. Stir in fruit mixture and nuts.
Add remaining ingredients; stir. Pour into 9 x 5"
glass loaf dish. Microwave for 6-8 minutes on
half power. Microwave for 3-3 1/2 minutes on
High or until toothpick inserted near center
comes out clean.
