Fresh Strawberry Muffins
1 1/2 cups flour
1/2 cup sugar
3/4 Tbsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 egg, slightly beaten
1/3 tsp almond extract
3/4 cup buttermilk
1/3 stick margarine, melted
1 cup chopped strawberries
cinnamon/sugar mixture for topping
Mix together flour, sugar, baking powder, salt and
baking soda. In a separate bowl, beat together eggs,
almond extract, buttermilk and margarine. Add berries
and buttermilk mixture to dry ingredients. Mix until dry
ingredients are just moistened. Fill greased muffin tins
about 2/3 full. Top with cinnamon/sugar mixture. Bake
at 350 degrees for 15 minutes or until tester comes out
clean in center. Makes about 10 muffins.
