Steamed Cabbage & Potatoes
1 lb. cabbage, cut into 1" pieces
1 large Russet potato, unpeeled, cut into 1/4" slices
2 T. olive oil
1/2 large onion, sliced
4 oz. Kielbasa or Pepperoni, thinly sliced
1/4 tsp. dried red pepper flakes
salt and pepper to taste

Heat the oil in a large,heavy saucepan. Add the onions, sliced meat
and red pepper flakes; cook until the onion wilts. Add the cabbage
and potatoes. Season with salt and pepper. Cover, steam over low
heat 30 - 40 minutes or until the potatoes are tender. Stir
frequently and if the veggies start to brown, add some water. Serves
2.
